Healthy Cooking with Kimba; Coconut Curry Shrimp

Coconut Curry Shrimp

At HorseGrooms, we encourage healthy eating as part of a sustainable grooming career. In this series, Healthy Cooking with Kimba, registered dietitian and lifelong horsewoman Kimberly Maloomian (“Kimba”), shares nutritious, no-nonsense recipes created with grooms in mind. Not every dish is a five-minute fix, but all recipes are wholesome, practical, and simple to make after a long day at the barn. This month, Kimba shares her fail-safe roast chicken, a comforting, healthy classic that proves good food does not have to be complicated.

Groom life means long days and early mornings, and having a go-to recipe that’s simple, nourishing, and satisfying makes all the difference. This recipe is great for dinner and holds well to bring to the barn the next day for lunch!

What do you need?

  • 10-12 Shrimp, frozen, raw, thawed
  • 1TB West Indian Blend Spice mix
  • ½ TB dried Dill
  • ¼ cup unsweetened, shredded coconut
  • 1 clove garlic, minced
  • West Indian Blend Spice Mix Ingredients

Mix equal parts in a glass jar: Cumin, Ginger, Turmeric, Allspice, Curry Powder, Sweet Paprika

What do you do?

  1. Heat oven to 375 degrees.
  2. Place shrimp in an oven-safe baking dish. Add all the rest of the ingredients to the baking dish. Using your hand, mix the shrimp around to completely coat with seasoning. Arrange evenly in the pan, it’s ok if they aren’t in a single layer, you just don’t want some parts of the dish to have shrimp piled 4 high and in other places just in a single layer.
  3. Place shrimp in oven. Cook for 15-20 minutes. When the shrimp turn pink and have started to curl slightly, they are done.

Great on its own or paired with rice. Simple, flavorful, and easy to prep ahead for the days when time is short.
